High quality maize is harvested when perfectly ripe, then sent to the Valsugana mill, where  it is carefully cleaned of any impurities, partially steam-cooked and ground into cornmeal.


Polenta Valsugana is naturally gluten-free, and therefore suitable for consumption by coeliacs. (All Polenta Valsugana products are recommended by the Italian Coeliac Association.
